On selected weekends at Hagen Middenweg, we welcome some of the world's most dedicated bakers. They travel here with their techniques, their recipes, and their take on bread, pastry, or cake - sometimes with specialist flour in their case.

A séance to taste something you won't find just anywhere, made by someone who has spent years perfecting it.

Jesper Gøtz

Jesper Gøtz trained as a chef, worked the kitchens of Noma and Restaurant 108, and somewhere along the way was handed the bread. He never gave it back. That obsession took him from Copenhagen to Paris to San Francisco and eventually to Refshaleøen, where he opened Lille Bakery. He now bakes by the sea at Sommer Canteen in Taarbæk — and designs his own tools, because the craft demands it.

He is a friend of Hagen, and a guest of our Baker Series.

Audrey Krief

Audrey Krief grew up in Paris, trained in its kitchens, and eventually followed love to Amsterdam.

She makes French pâtisserie the way she always has — by hand, with patience, and with an almost stubborn devotion to the small things. Her favourite thing to make is still the madeleine.
